Nutritionally Effective Papaya Powder Prepared by Tray Drying Technique

Papaya (Carica papaya L.) is a tropical fruit having importance due to its high nutritional and medicinal value. The papaya, papaw or pawpaw is the fruit of the plant Carica papaya, in the genus of Carica. The botanical name of papaya, is Carica papaya L. belong to the family Caricaceae. Using standardized optimum conditions of the foaming pulp of papaya, it can be achieved nutritionally effective papaya powder prepared by tray dryer. The standardized optimum condition of foamed papaya pulp viz. foam expansion, foam density and foam stability was observed as 74.76%, 0.512 g/cc and 98%, respectively. The highest score of the biochemical parameters viz. total sugar, reducing sugar, β-carotene, ascorbic acid, crude protein and moisture content was found at 70⁰C of drying temperature and 9 mm of drying thickness in tray dried papaya powder.
