This study was conducted to evaluate the porcine gene GADD45A (growth arrest and DNA-damage-inducible protein 45 alpha) as a positional candidate controlling quantitative trait loci (QTL) for meat quality traits on chromosome 6 (SSC6). Four exons of the porcine GADD45A gene were defined from cDNA and BAC clone sequences. A total of 4 single nucleotide polymorphisms (SNPs) were identified in porcine GADD45A. The association of these SNPs (g.196A>G, g.392C>A, g.955T>C and g.3247A>T) with meat quality traits was evaluated in 678 Berkshire pigs.

The aim of this study was to analyze the results of two crossing systems between wild boars and different domesticated pig breeds. Hybrid wild boars were produced by crossing captured wild boars with Meishan pigs and LY sows according to the traditional production system. The resultant commercial hybrids were black and white in coat color, respectively. Significant differences were found in the carcass and meat quality traits and nutritional values between these two hybrid wild boars.

Comparison between meat quality of Hanzhong White pigs and carcass weight

G. F. Wu, Shi, X. E., Li, Y. F., Lu, H. Z., Song, C. C., Jia, L., and Sun, S. D., Comparison between meat quality of Hanzhong White pigs and carcass weight, vol. 14, pp. 6059-6064, 2015.

A total of 48 carcasses of crossbred Hanzhong White pigs were divided into 3 groups (I, 90-99 kg; II, 100-109 kg; III, 110-119 kg) to investigate the influence of carcass weight on meat quality. The intramuscular fat content of the 3 groups increased from 1.90 to 4.90%; for meat color, Warner-Bratzler shear force, drip loss, and oxidation-type muscle fiber percentage, and muscle fiber diameter of the longissimus lumborum, the indices in group II and group III were better than those in group I (P

Effect of the halothane genotype on intramuscular fat deposition in swine

L. R. Alves, Antunes, R. C., Andrade, R. B., Storti, A. A., Reis, S. L. B., Carrazza, L. G., Osava, C. F., and Costa, N. V., Effect of the halothane genotype on intramuscular fat deposition in swine, vol. 13, pp. 363-370, 2014.

Intramuscular fat (IMF) content has been identified as an important factor in determining the quality of pork. Previous studies have suggested that IMF deposition may be associated with the presence of the halothane (HAL) gene. This study aimed to evaluate the effect of the HAL gene on IMF deposition in crossbred pigs of commercial lines, which were killed at a slaughterhouse under official inspection. The genotype of the HAL gene was determined by polymerase chain reaction-restriction fragment length polymorphism analysis. IMF was analyzed from longissimus dorsi samples.

Antioxidant capacity and meat quality of broilers exposed to different ambient humidity and ammonia concentrations

F. X. Wei, Hu, X. F., Sa, R. N., Liu, F. Z., Li, S. Y., and Sun, Q. Y., Antioxidant capacity and meat quality of broilers exposed to different ambient humidity and ammonia concentrations, vol. 13, pp. 3117-3127, 2014.

To investigate the effect of humidity and ammonia on the antioxidative capacities and meat qualities of broilers, 192 broilers were divided into 2 groups: high (H, 70 ppm) and low (L, 30 ppm) ammonia concentration. These groups were divided into 30% (Treatment humidity, T) and 60% (Control humidity, C) humidity, giving 4 treatments: C+L, C+H, T+L, and T+H. Blood and muscle antioxidative capacities and meat quality were measured.

J. X. Huang, Qi, R. L., Chen, X. L., You, X. Y., Liu, X. Q., Yang, F. Y., and Liu, Z. H., Improvement in the carcass traits and meat quality of growing-finishing Rongchang pigs by conjugated linoleic acid through altered gene expression of muscle fiber types, vol. 13, pp. 7061-7069, 2014.

A total of 160 Rongchang pigs (26.76 ± 1.78 kg) were randomly assigned to 5 dietary treatment groups until their body weight (BW) reached 90 kg. The diets were supplemented with 0, 0.5, 1.0, 1.5, and 2.0% conjugated linoleic acid (CLA). Our results showed that the 1.0 to 2.0% CLA-fed pigs had less back fat deposition when their BW reached 90 kg than the pigs that received less than 1% CLA. During the 30 to 60 kg growing period, 1.0, 1.5, and 2.0% CLA treatments improved pork quality by significantly reducing the pork pH (P
